Biei is a small town in the hills of central Hokkaido, known for its patchwork fields and the deep stillness of its winters. At 27 degrees Fahrenheit, just below freezing, the air goes clean and sharp and everything slows down. That is the feeling we wanted to bottle: not a single flower or fruit, but a moment of calm in a cold, beautiful place. The name keeps that temperature in view every time you see it.
The opening is fresh and a little green, mandarin orange lifted by coriander, like the first cold breath of morning. At the heart, orange blossom, lavender and Bulgarian rose bring a soft floral calm, the lavender nodding to those Hokkaido fields.
